Irresistible Cannoli Cookies
Cannoli Cookies, are easy Italian Christmas cookies full of flavor with ricotta cheese, chocolate chips, and pistachios and have a soft almost cake-like texture.

Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup ricotta cheese
- 1 teaspoon vanilla extract
- 3/4 teaspoon ground cinnamon
- 1 teaspoon fresh orange zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 10 ounces mini chocolate chips, divided
- 1 cup chopped pistachios
Instructions:
- In a large mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
- Blend in the eggs and ricotta cheese until well combined.
- Add in the vanilla extract, cinnamon, and fresh orange zest.
- Mix in the baking powder, baking soda, and salt.
- Gradually mix in the flour until just combined.
- Fold in 1 cup of chocolate chips and the chopped pistachios.
- Cover the dough and refrigerate for at least one hour.
- Preheat your oven to 375 degrees F (190 degrees C).
- Line baking sheets with parchment paper or lightly grease them.
- Using a medium cookie scoop or spoon, drop about 1 1/2 tablespoons of dough per cookie onto the sheets, leaving about 2 inches between each.
- Bake for 8-11 minutes or until golden brown around the edges.
- Allow to cool slightly, then transfer to wire racks to cool completely.
- Melt the remaining chocolate chips in a microwave-safe bowl in 20-second intervals, stirring after each until smooth.
- Spoon the melted chocolate into a small resealable bag, snip one corner, and drizzle over the cookies.
- Let the chocolate set before serving.
Tips:
For the chocolate drizzle, some brands of chocolate chips melt better than others. A semisweet or dark chocolate bar can also be a great alternative.
No need to refrigerate these cookies after baking – store them in an airtight container like your other favorite cookies.
Substitutions:
Feel free to substitute the mini chocolate chips and pistachios with your preferred baking chips and nuts.
