Gnocchi
Gnocchi is traditionally a kid favorite dish. So many ways to mix it up for a quick, healthy, & easy weeknight meal!
Ingredients
- 18oz gnocchi
- 2tbs of minced garlic
- 4oz pancetta
- 3 cups of fresh spinach
- 1 1/2-2 cups of tomato sauce
Instructions
- In a large pot bring 6quarts of water to a boil.
- Cook gnocchi according to package, until it floats.
- Drain and set aside.
- Meanwhile in a large pan add 1-2tbs of EVOO over medium high heat.
- Add garlic and cook about 1 min.
- Add pancetta and cook about 3 min until it starts to brown.
- Add spinach to the pan and mix well with pancetta and garlic until wilted.
- Add tomato sauce to the pan, reduce heat to low, and simmer all the flavors together about 5 min.
- Add gnocchi to the pan and mix well. You can add some grated Parmesan cheese if you like! Enjoy!
