Mussels & Clams over Linguini
Seafood and pasta go together like peanut butter & jelly (or mom & wine)! This delicious dish is super easy, fast, and most of all economical! You can feed a family of 4 for $20! Enjoy my take on Mussels & Clams over Linguini!
Ingredients
- 1pkg of linguini
- 1tbs of butter
- 2tbs of minced garlic
- 1/4 tsp of crushed red pepper
- 1/4 tsp of salt
- 1/2- 1 cup of dry white wine Juice of 1 lemon
- 1, 10oz can of boiled clams
- 1, 16oz bag of frozen mussels
- 1, 16oz bag of frozen clams Optional: Italian parsley, oregano, or basil to taste.
Instructions
- In a large pot, bring salted water to a boil.
- Add pasta and a drop of EVOO so it doesn’t stick.
- Cook according to directions and drain.
- Meanwhile, in a large Dutch oven, melt butter over medium-high heat.
- Add garlic, crushed red pepper, salt and cook until fragrant.
- Add white wine and stir well. Cook about 3-5 min until wine is reduced.
- Add lemon juice, boiled clams and cook about 5 min.
- Drain frozen mussels and clams out of their bags and add to the Dutch oven.
- Reduce heat to medium and cover, stirring often, allowing the clams and mussels to fully open for about 5-8 min.
- Put cooked pasta in a large serving dish and pour seafood medley over the pasta.
- Top with some Italian parsley, basil, or oregano. Viola! A delicious seafood dish your whole family will love!
