Pasta with Vodka Sauce
A classic American-Italian comfort food~ Pasta with Vodka Sauce! My family and I love this creamy sauce over rigatoni but you can use whatever your favorite pasta shape is!
*Serves 6
Ingredients
- 16oz of pasta
- 2tbs of butter
- 28oz of Marinara Sauce
- 1 cup of vodka
- 3/4 cup of Heavy Cream, room temperature
- 1 cup of grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to directions, drain, toss with a little butter, and set aside.
- Meanwhile in a large sauce pan bring marinara sauce to a slow boil over medium heat.
- Add vodka to the sauce and bring to a steady boil.
- Cook for about 20 minutes until vodka is reduced and the alcohol is burned off.
- Next add your room temperature heavy cream to the vodka marinara. It is important for the cream to be room temperature so it doesn’t curdle!
- Mix well and cook for another 5 minutes on med/low heat.
- Add grated Parmesan cheese, salt and pepper to taste to the sauce and mix well.
- Combine pasta and vodka sauce and top with more grated cheese if you like!
- Serve warm but also makes great lunch leftovers the next day. Enjoy!
