V’s Plant Based Sausage & Pasta
Plant based meats are becoming more popular, more accessible, and more delicious than ever! I was recently at Sprouts and decided to pick up the plant based Italian Sausage by LightLife foods and it was amazing! I have since tried their ground beef to make meatballs and they were a hit with my family! Here is my recipe for pasta and plant based sausage that will surely become a fan favorite!
*Serves 5
Ingredients
- 1 lb of dried pasta
- 14oz package of LightLife Plant Based Italian Sausage
- 1 medium onion chopped
- 3 tbs of minced garlic
- 1 28oz can of crushed tomatoes
- 1 8oz can of tomato paste
- Seasonings: salt, pepper, dried basil, and dried oregano
Instructions
- Heat 6 qts of water in a large pot and bring to a boil.
- Add some salt and then add dried pasta.
- Cook according to directions and et aside.
- In a large deep pan, heat 1-2 tbs of EVOO over medium/high heat.
- Cut up sausage into 1/2 inch chunks and cook until browned.
- Remove from pan and set onto a plate.
- Add 1-2tbs of EVOO to the same pan and add onion and garlic.
- Cook until onion is translucent and garlic is fragrant about 2-3 min.
- Lower heat to low/medium and add crushed tomatoes and tomato paste to the pan and mix well until it is lightly boiling.
- Add sausage to sauce and mix well.
- Season with some salt, pepper, a dash of dried basil, and a dash of dried oregano.
- Simmer over low heat for about 10 min.
- Plate the pasta and serve sauce sauce on top. You can top with parmesan or Romano cheese if you like! Enjoy!
