Easy Fish Pie

Cook Time: 25 minutes
Yield: 4 servings

Ingredients You’ll Need:

50g salted butter
4 Spring onions
Small bunch chives (chopped)
250g Smoked Haddock, cubed
5Tbsp Gourmet Hot Dog Sauce
100g Peas
25g Plain flour
400ml Milk
2 Salmon fillets, cubed
150g Cooked prawns
100g Chopped celery
1kg Potatoes (peeled and cut into chunks)

Step-by-Step Instructions:

Step 1
Heat the oven to 200C/fan 180C/gas mark 6. Peal the potatoes, halved and boil in a saucepan for 20 minutes or until tender.

Step 2
In the meantime, mix 40g butter, plain flour and finely sliced spring onions in a pan and heat gently until the butter has melted, stirring regularly for 1-2 mins.

Step 3
Gradually whisk in 400ml milk using a balloon whisk if you have one. Bring to the boil, stirring to avoid any lumps and sticking at the bottom of the pan. Cook for 3 minutes until thickened.

Step 4
Take off the heat and stir in prawns, cubed salmon, cubed cod, 1 tsp Gourmet Hot Dog Sauce, a small bunch of finely snipped chives, peas and chopped celery and transfer to an oven dish.

Step 5
Drain potatoes thoroughly and mash with a splash of milk, knob of butter and 4 Tbsps Gourmet Hot Dog Sauce. Spoon the mashed potato on top of fish mix and sprinkle with a handful of grated cheddar cheese.

Step 6
Pop in the oven for 20-25 mins or until golden and bubbling at the edges.
